Creamy Lemon Rose Pie
1/2 cup or 1 cup pick fresh rose petals rinse* , pat dry and keep in fridge
Grated zest of 1 lemon sprinkle with sugar and let sit until ready to add to pie
1 small package lemon jello or if you want it real good I'd use gelatin and lemon juice instead
1/2 cup rose syrup
1/2 cup boiling water
1 package cream cheese
juice of the lemon you grated
1 pint whipped cream
graham cracker crust for one pie
In bowl mix boiling water , rose syrup & jello, set in fridge and let cool, stir often so it does not set .
Make your graham crust, bake and cool. In bowl beat with mixer cream cheese until creamy, add in lemon juice and rind .
Then slowly beat in cooled jello mixture into cream cheese mixture. Dump whipped cream into jello cream cheese mixture and fold in, do not beat! When well blended, fold in your rose petals I would use a whole cup full ? .When all is folded in pour into pie shell and let set in fridge til ready . You could garnish the top with little plops of whipped cream rose petal & a lemon zest if you like .
My cousin served a nice green tea with this and it was really nice with it or a nice mint lemonade would go well too . Enjoy Rox!
Make sure you are using roses you know have not been sprayed with pesticides or poisons.
