Rocken Raw Pesto

My girls playing around, doing homeschool idol, even Simon was there !!!!
Rocken Raw Pesto
1 cup of almonds, soaked overnight in cold water. Throw away water and store in fridge till ready to use * see note at bottom
zest of one lemon
juice half a lemon
1 bunch of flat leaf parsley
1 garlic clove or more if needed, peeled
salt and pepper to taste
1/3 of a cup olive oil, plus more as needed
In a food processor add parsley (washed, steams and all) and then the rest of ingredients. Process till smooth. You will have to keep stopping and push the parsley down. Taste and adjust salt, pepper and garlic to your liking. If the pesto seems to dry add more oil a bit at a time till you get a constancy you like. Serve with lots of raw veggie and bread.
*Note,
There are two reasons why you soak the almonds, one is it makes the almonds healthier and easier to digest and second soaking them makes them moister and sweeter, so the dip will have a creamier texture.
This pesto has no cheese, because it is raw (nothing cooked) enjoy xoxox

Clarice those girls are having alot of fun! When our youngest daughter got married, she and her groom had everyone's picture taken in front of retro sheets. They were great! At first I thought the idea was crazy even for a home wedding, but everyone had so much fun!

I love the idea of an outside wash station.
My Beloved picked up an old stainless sink for me and I have it behine the garage for garden vegi clean up. It is hooked up to the hose and I love it. I really should post a pic to my blog for you all to see.

What beautiful girls you have there! How fun, "Homeschool Idol"~much more creative than the real thing. I hope your Simon was nicer than the real one!
Mmm, pesto. . .We'll have to grab some almonds and give your recipe a try. Have you ever tried raw zucchini "spaghetti"? If you use your imagination, it's close to the real thing.

I can't wait to try the pesto. I'm so happy to find out that it's still good without cheese, since I have a dairy allergic one at my house. I think I will try it with basil and pecans (since that is what I have on hand). Soaking is a great idea! I knew about the digestibility/nutrition, but didn't think about it being more creamy. Hmmm...

Your girls look so gorgeous!!!! Justin and I would have loved to have been there for 'Homeschool Idol!" It looks like such fun!!! Love their outfits and pretty, happy faces!!!

Thanks for the pesto recipe. I will try it. I've been harvesting some of my pesto and made 24 little zip-lock bags (one per meal for four) and have them in the freezer. Mine is also made without any dairy --- and I tried a new recipe this year that called for nutritional yeast. It was very good! I told no one in the family it was cheeseless until the meal was over. No one could tell, so I deem the recipe a great success! LOL! I will try your idea of almonds. I made some of mine with pine nuts, and other with walnuts. About half the pesto I froze also had sundried tomatoes added. Isn't pesto fun?
