When I was a newlywed a friend of mine who knew more about cooking than I did taught me how to make meat balls. The trick to not ending up with hockey pucks is to treat them gently. Don't over mix and to make the meat balls you gentle toss them back and forth from one hand to the other giving them a gentle squeese, then you roll them in the palm of one hand with the other hand to finish them off.
Swedish Meat Balls was a favorite of my family and here is the recipe I used.
1 lb. ground beef
1/2 lb. ground pork
1/2 c. minced onion
3/4 c. fine dry bread crumbs
1 tbsp. minced parsley
1 1/2 tsp. salt
1/8 tsp. pepper
1 tsp. Worchestershire sauce
1 egg
1/2 c. milk
1/4 c. oil or fat
1/4 c. flour
1 tsp. paprika
1/2 tsp. salt
1/8 tsp. pepper
2 c. boiling water
3/4 c. sweet or cultured sour cream
Mix thoroughly beef, pork, onion, crumbs, parsley, seasonings, egg, and milk. Shape into balls the size of walnuts. Brown in hot fat in heavy skillet. Remove meat balls from pan and stir flour, paprika, salt, and pepper into the fat. Stir in water and cream. (I always warm up my sour cream with a little of the hot mixture) Return meat balls to gravy; cook 15-20 mins. 6-8 servings.

Sounds almost exactly like my recipe, only I put about 1/4 tsp. nutmeg in mine. Swedish meatballs have always been my go-to comfort food, I love them! They were my grandmother's favorite food!
