Okay thisparmesan cheese replacement was rockin and gives a nice crunch. I know we will be making double batch next time.
Makes about 1 cup
¾ cup toasted, salted sunflower seeds or you can use raw or other nuts
1 generous TBL. of nutritional yeast (this has a cheesy flavor)
1 large garlic clove
½ tsp. salt
Some fresh ground pepper
5 fresh parsley leaves
Chop all in a spice grinder or food processor until crumbly. If too wet, add more nuts
and nutritional yeast.
Two notes: 1, raw sunflower seeds would be healthier but I thought my picky 15 yrd. girl would like the toasted, salted version better. 2, I made this pretty salty and garlicy. I wanted it to have an intense flavor, like parmesan is. You are not eating a bowl full of this, it is just a garnish but you want it to have a punch.
