Okay, today we start the dreaded diet for 3-4 weeks. No dairy, wheat, corn, soy, chocolate, nightshade veggies, potatoes, refined sugar or coffee. This is going to take all my creative powers to make interesting, yummy meals but I have a plan. Tonight is a stir-fry of caramelized onions, garlic, zucchini and ground turkey with white rice and chickpea miso. Dessert is coconut milk ice cream with bananas and brown sugar (well rapadura)!!

Tonight’s dinner is a version of my baked shrimp but since I cannot use butter, bread crumbs or cheese, we will toss the shrimp in chive oil and top with the parmesan replacement . Served w/ rice and salad. Dessert is raw carrot cake. (Raw carrot cake, gross. Need to find a better recipe)

Happy Sunday, today menu is beef stew served over quinoa. Now the only problem w/ stew is all my tricks for making a rich stew I cannot use, coffee, tomato paste, wine or chocolate. So instead I am going to roast garlic and add that. Also I am not adding much broth & cooking for 6 hr at 300. This will give me a thick, rich sauce. I am steaming & adding pureed broccoli to the stew (to hide it, we do not like broccoli). Dessert is a gluten free cinnamon crust tart filled w/ cashew cream and tea poached pears!!
(Oh my gosh, I think this may be the most brilliant, complex dish I have ever made. Image a toasted almond, slightly cinnamon macaroon crust. Topped with a dollop of ultra creamy unsweetened cashew cream, sliced pears poached in pear/ginger tea with a bit of sugar. THEN to gild the lily, I boiled down the poaching liquid w/ more sugar and made this thick caramel, flowery sauce drizzled over the top. Heaven!!)

I am exhausted from all the cooking this weekend. So a simpler dinner tonight. Grilled tuna steaks, Chloe cannot have soy sauce, so I found an amino acid made from coconut, which is similar. I will marinate the tuna in this and garlic. Sushi rice and I am cheating a bagged spinach salad w/ cranberry & raspberry dressing from TJ (we will just leave out the cheese part). Dessert is frozen almond butter fudge. We will leave off the chocolate part, be foreword, this stuff is HIGHLY addictive!!
(fudge toooo sweet, cut back on sugar, made with almondbutter but it is addictively good)

Well this is my crazy day of the week. I come home late and need to have something quick and easy for dinner. So it is brown rice pasta with cheese-free pesto. We made pesto a couple of weeks ago and froze some. I will blend it up w/ fresh spinach and toasted nuts. Dessert is fresh raspberries with whipped coconut cream!! (We did not like the whipped coconut cream. I think it was the xathum gum, I used too much. It was weird and slippery. Cashew cream would work better.)

Today’s dinner is grilled salmon (David caught one, it is big) with a rapadura/mustard glaze, baked sweet potatoes (Chloe hates them so she will have sushi rice) and raw peas. Dessert raspberry coconut milk ice cream. Off to make ice cream!

Dinner is slow smoked, apple-wood baby back ribs with my smoked paprika rub and a quinoa/olive salad w/ raw veggie (peas, carrots and green onions) and a nice glass of spicy zin. We never did eat the raspberry coconut milk ice cream, so we will enjoy that tonight too!!

Dinner: rosemary roasted chicken, roasted carrots and sweet potatoes fries w/ smoked paprika rub, simple green salad w/ maple vinaigrette. Dessert my caramel oat bars (made with brown rice syrup, oil and rapadura) but instead of oats, used rolled quinoa. Also no chocolate but sliced almonds and dried cranberries instead.
(Bars seems good to me but needed more caramel sauce a bit too dry. Use a bit less quinoa.)

Hello, tonight’s dinner is maple/balsamic roasted winter squash and onions over brown rice pasta with bacon crumbled on top (instead of cheese). Homemade gluten free boule bread. And maple-rice pudding, made with coconut and almond milk. (LOVED rice pudding)

Well now I have hubby sick and Auberne` w/ a low grade fever. Simple dinner, baked meatballs w/ cooked pureed broccoli and almond flour as a binder, also baked brown rice.

So a simple dinner again tonight of shrimp stir-fry with LOTS of garlic and sushi rice. No dessert. Do not think sugar, is a good thing right now w/ Auberne`s fever.

Auberne` has chicken pocks and Chloe’s throat hurts. Simple grilled steak and salad with cherry balsamic vignette

Tonight’s dinner is beef stew w/ roasted garlic and green beans served over quinoa. I made carrot cake muffins that are just a tiny bit sweet w/ stevia and xylitol. Made w/ coconut flour. They are okay, not fab.

Tonight’s dinner, grilled pesto (no cheese, no nuts) chicken, basmati rice and broccoli slaw with garlic balsamic dressing. Dessert is gingerbread cookies, made w/ almond flour, soregum, stevia and xylitol. The girls throat though, is hurting them so much I bet all they eat is rice :- (

Tonight’s dinner is baked meatballs w/ pureed, cooked broccoli & almond flour as a binder. Steamed artichokes and homemade egg free mayo for dipping. Dessert is the honey coconut milk rice pudding angina. Love it. Just used a tiny bit of honey and then vanilla stevia.

Chicken rice soup, rice pudding. The girls are miserbale with the chicken poxs.

Tonight’s is my pumpkin coconut soup garnished with bacon. No salad tonight the girl’s throat is too sore. Dessert raw sesame truffle, which I am addicted to!!

Baked Moroccan spiced meatballs, with purred broccoli and rice pilaf w/ currents.

Grilled steak with fresh rosemary and garlic rub. Homemade crackers and salad. Crakers were sooo good!!

Tonight’s dinner is apple chicken sausages w/ caramelized onions, fennel root and apples served over baked brown rice. Also broccoli slaw salad.

Tonight’s dinner is dried cherry, balsamic, bacon glazed cod w/ balsamic rice and raw green beans from the garden. Dessert smoked salt caramel ice cream (mad w/ coconut milk) garnished with the spiced pumpkin seed brittle I made yesterday. I am soo sad this is not our weekend, this meal is screaming to a glass of pinot noir!!
Now we start adding food back into our diet. By the way Chloe ended up with no food allergies, yeah!!
